For Lindsay Pemberton baking runs in her blood, her eponymous wedding cake business has won multiple awards for her beautifully elegant, perfectly finished cake creations. From an early age baking was a source of happiness, an opportunity for giving and bringing joy to the lucky recipients of her baked treats. It was obvious this was the path she was chosen to walk. After running her successful business for many years, with self-taught skills, she decided to challenge herself and test her knowledge by enrolling in a pastry school run by a highly acclaimed London pastry chef. She quickly became a pastry chef to watch and passed every assignment, every theory and practical exam with distinctions.
Lindsay has the ability to talk to a couple and dig deep into their story, to understand who they are and what brings them together. She is a friendly, warm person who loves to find out about a couples journey. Using this knowledge, she creates unique, individual wedding cake designs that are woven with the little details that represents who they are. Lindsay’s superior baking skills ensures that everything she creates taste delicious. It is not uncommon for her to receive messages from couples many years after their wedding day to say they are still dreaming about the delicious cakes she created for them.
Because each item that leaves her studio is created by Lindsay herself, she only takes commissions for a limited number of weddings per year, she has never had the desire to be a “cake factory”. Each design is given the time and attention needed to ensure it is perfect on your wedding day. Lindsay’s specialist skill is her sugar flowers, intricate, delicate petals that mimic mother nature so beautifully that often times people think they are the real thing. In addition to wedding cakes, she offers a range of patisserie items to elevate your wedding dessert table. Each delicious mouthful is created using the finest ingredients and finished beautifully, making them almost too good to eat.
If macarons are your weakness, you haven’t lived until you’ve tried one of Lindsay’s world class varieties. Sinking your teeth into their crisp shells that give way to chewy centres and creamy fillings, it is very hard to stop at just one and why should you with so many flavours to choose from! Lindsay is currently working on a line of patisserie gift boxes, which will be available to order from her new website, so you can experience all manner of delectable goodness in your own home, no more having to wait for a wedding.
In addition to running her wedding cake and patisserie business, Lindsay is the Managing Editor of British Bride magazine. Lindsay and James met several years ago and immediately clicked. James mentioned his dream of starting a luxury wedding magazine and asked Lindsay if she would join him. Together they founded the magazine at the beginning of 2019 and have been creating magic ever since. They have built a strong team of industry experts who offer something a little different to the usual journalistic approach of other wedding magazines. Each member knows their industry inside and out so there is little wonder that the magazine has grown so rapidly from the launch to their fourth issue having a readership of over 35,000 in less than a year. Lindsay says, “Because we all understand the industry from a personal perspective, it allows us to speak from knowledge and relate not to only our couples, but industry brands as well.”
It is obvious that she leads a very busy life, but she has an innate capacity for organisation, which is vital when juggling her business, the magazine and her three children. She says, “I have very little time to rest, but enjoy being busy, the variety of my life keeps me on my toes, I just have to remember each morning if I am putting on my chef whites, or normal clothes."
